This Topside is a lean and tender cut of meat, typically from the inner section of the hindquarter (thigh) of a buffalo. Very high quality meat. It was fresh and the flavor profile was excellent once cooked. My only reason for dropping a star is that the vacuum seal on one end was slightly loose, though the temperature remained fine. Still a great bulk purchase.
